Fennel seed contains naturally occurring essential oils, the most abundant of which is trans-anethole — the compound responsible for fennel's distinctive anise-like aroma and flavour. The seeds also contain flavonoids, polyphenols and other plant compounds characteristic of Foeniculum vulgare.
